The national dish characteristic of Tashkent city and its surrounding areas, namely Tashkent wedding palov (Toshkent to'y oshi), has been officially registered in the state register as a geographical indication. Zamin.uz reported this.
Relevant information was provided by the Ministry of Justice regarding this matter. This decision allows for the legal protection not only of the dish's name but also the traditional methods and unique aspects of its preparation.
From now on, the Tashkent wedding palov brand will be supported by the state, and its quality will be guaranteed in accordance with established standards. Based on historical and ethnographic data, we see that the traditions of preparing palov in the Tashkent oasis have been formed over centuries and passed down from generation to generation.
In particular, the process of preparing wedding palov stands out from other dishes due to its special rituals and high level of skill. It is not just a simple meal, but a complex process embodying the correct distribution of heat, the harmony of ingredients, and cooking technologies.
Typically, wedding palov is prepared in the early morning, in very large quantities, and in special semi-spherical thick-walled cast-iron cauldrons. During preparation, special attention is paid to the taste, aroma, and appearance of the dish.
These exact characteristics distinguish it from the palovs of other regions. It is worth noting that the concept of a geographical indication confirms that a specific product belongs precisely to a particular region.
Furthermore, it is considered a form of intellectual property indicating that the quality and characteristics of the product are directly linked to that location.
