
On October 20, a gastronomic event dedicated to Uzbek national cuisines — the "Palov Festival" — began at the famous "Lali" restaurant in Tashkent. This was reported by Zamin.uz.
This festival was organized on the initiative of Novikov Group and Family Garden and is being held simultaneously in the cities of Tashkent, Sochi, Krasnaya Polyana, and Voronezh. The main goal of the event is to widely promote Uzbek culinary traditions, particularly to introduce palov, which is included in UNESCO's list of intangible cultural heritage, to the public.
At the festival, renowned brand chef Ruslan Italmazov and his team present guests with seven types of traditional palov. Among them are popular dishes such as choyhona osh, Fergana palov, Kabuli palov, and Samarkand home-style osh.
For example, choyhona osh is prepared with lamb cooked in tail fat and spices, Fergana palov is garnished with red rice, kavartak, and green radish. Kabuli palov is enriched with raisins and chickpeas and served with the drink "shakarob."
Samarkand home-style osh is made with quince and beef and is served alongside ayran. The festival will continue at all "Lali" restaurants until November 9, 2025.
