This salad is famous not only for its taste but also for its interesting history. Its creation began in 1860 by the French chef Lucien Olive at the "Hermitage" restaurant in Moscow.
Initially, the salad was made from expensive ingredients such as duck meat, veal tongue, crab, and black caviar. The chef offered this salad as a special and unusual dish.
However, over time, the salad's recipe changed. One day, Lucien Olive's apprentice incorrectly arranged the vegetables.
Following the chef's instructions, all the ingredients were mixed, resulting in a new method of preparing the salad. Later, this method became more widespread.
During the Soviet Union era, the original recipe of the salad was altered, and simpler ingredients such as sausage, potatoes, carrots, and mayonnaise began to be used instead of expensive products. This made preparing the salad cheaper and more convenient.
As a result, a new variant called "Stolichniy" became popular. Today, olive salad is prepared in many households as the main dish for the New Year celebration.
It is also very popular in Uzbekistan, where it is made in various ways both in cafes and at home. Due to its simplicity, taste, and historical significance, olive salad is a staple decoration of every festive table.
